For categories, i've planned to redo and improve this part in the future, but it's already possible to change display with custom css, or by using a custom site template override.

All depends on your needs, and the result you want.

An online link could help too, as site template CSS could have an impact on rendering too.

About a country filtering (as a city one too) this is in my todo list, but for now it is postponed until i work on a venues manager (not sure for this end of year, or next year... already many things in process!)
