So it may be a conflict only admin side...
This only way is to check code generated on the edit page, and/or disable each other extensions (plugins, admin modules, admin component...) to finc which one is giving this conflict.
I see no other reasons for this problem...

And... do you have the datetime picker for single dates ?
If yes, when you select your date, do you click on "Validate" ?
